Edamame

I finally found some edamame at one of our grocery stores.  They are frozen and unshelled.  I would like some ideas what to do with them.  I have eaten them in a Lean Cuisine dinner and love them.  I haven't seem them anywhere else so I am anxious to go and buy a bag and need ideas how to fix them.  I thought of a salad using garbanzos, garlic, onion and tomatoes but would love some input from you good cooks with experience preparing endamame. I'm making myself hungry now!!  Hope everyone is doing great......I've been lurking here for awhile... I guess I don't have anything of interest to talk about so haven't posted.  I'm doing great with weight loss and feeling super !!

I microwave them in the shell like any other vegie with a little salt.  Then just peel and eat.

Found this recipe on another forum, but its good and I take it to potlucks cause its pretty.

1 package edamame
1 can corn,rinsed
1 can black beas, rinsed
sundried tomatos diced
roasted red peppers diced
basil
rice vinager
salt to taste

Enjoy!

Thank you Reggie.  This sounds delish!!  I am on my way to go pick up ingredients to make this salad.  My daughter in Boise turned me on to these and I've only eaten them in Lean Cuisine dinners but she buys them in the shell .  So much protein, wow!!

And fiber too!  I eat them just out of the shell with a little kosher salt too. they are really good.

Hi Carla....It is blizzarding (is that a proper word?) in the southern and eastern parts of the state but I live in NW North Dakota and we have escaped any and all the bad weather these poor other folk have been experiencing.  There is flooding in Fargo, ND and now they have this snowstorm with an estimated 12-15 inches more of snow, high winds that could possibly smash the high waters into the dikes and levees and collapse them.  It has been very devastating to say the least.  We are some strong people up here in the midwest and everyone has pitched in an volunteered tirelessly to help their fellow neighbors.  Many  people from my town here have gone to these areas to help sand bag.  We are so fortunate right here to not be affected but I know many people from these areas and my heart is breaking for them.  A reporter on the Weather Channel this morning was on site and talking about the flooding in "Margo-Forehead" and of course the names of these towns are "Fargo-Moorehead".  Fargo is ND and Moorehead is Minnesota.
I am on my way to the super market to buy my edamame and a few other things to make a salad.

Hi Sandy,

Edamame is one of my go to proteins. I eat them just about everyday. One of the best sources of protein. I buy them in the shell uncooked and cooked them in boiling sal****er for five mintues and drain. Sprinkle with salt and enjoy. I also get them without the shell and use them as I would lima beans. I put them into bean salads. I make a really nice salad with quinoa it is the only grain that has 100% amino acid so its a protein. I cook the quinoa and then add small dice of red pepper, cucumber, celery, edamame, small diced carrot and then mix some red wine vinager and evoo, salt and pepper. It is so good and alot of protein. You can add some feta cheese or crumbled goat cheese. It is so good. and good for you.  Hope this helps you.

Edamame - yum!!!  You can use them in many different ways - steam some in the microwave and use in salads, stir fry, as a side dish and even just to munch on as a snack.  I've even used them in soup.   They're green soy beans.  I've gotten them at Kroger and Meijer.  Bon appetite!

If you go to food network website and enter roasted edamame salad you will get a recipe for edamame that contains edamame, green onions, corn and tomatoes.  It says to serve cold but I like it hot.  I also have taken the shelled edamame and boiled with star of anisaise in the water.  Just a few minutes is all it takes.  If I steam or boil them in the shell I just dip in soy sauce and pop them out of the shell into my mouth.  However, i can't eat them often as I am on coumadin and soy contains a lot of vitamin K.
